Please do a dedicated stuffed pasta episode! I was just searching for a basic cheese/spinach ravioli or mushroom ravioli recipe and you're my go-to source. I'll have to wing it on the filling but at least I can follow your recipe for the dough. I love your channel!

VPN companies need to stop lying so we solved the security problem with HTTPS and Certificates eges ago. What VPN is good for is hiding your traffic from your ISP or avoiding georestrictions. But VPN doesn't make your connection to the bank more secure becsuse the data is already encrypted and the certificates ensure that you are connected to a secure site.

I would just point out that you missed to put a bit of black pepper and mainly nutmeg in the stuffing.
Particularly nutmeg is very important as it will give a completely different flavour.
Another missing bit is the parmigiano on top, this is a must!!!
The shape also is quite bigger than usual but was a very well made recipe, 9/10 !!!
Regarding the name vs shape controversy there a many different shapes, typical from Mantova are the Tortelli (the one you made) and the Cappellacci, which resemble a bigger tortellino, are more on the southern province toward Ferrara in Emilia.
Obviously as you know in Italy everybody is proud of his own differences.
We eat a lot of pumpkin. I like gem squash. Hard to find in the USA, but spaghetti squash is similar–milder flavor and thicker strings. Roast first, split, salt pepper, and shameless gobs of butter.

Favorite kinds of squash: kobacha, kuri, delicata, golden nugget, turban, acorn, butternut… I could go on. 🥹 We can’t forget summer. 😍
