OVERNIGHT PIZZA DOUGH
(makes 3 pizza, but easily scalable!)
Caputo “00” Flour, 500g | 17 2/3oz. (All-purpose flour will work, but “00” is better.)
Warm Water (no hotter than 38°C or 100°F), 315g | 11oz.
Kosher Salt, 15g | 1/2oz.
Instant Dry Yeast, 1/4 tsp.
SAN MARZANO PIZZA SAUCE
(make enough for 8-9 pizza)
Canned San Marzano Tomatoes + juices, 795g | 28oz.
Kosher Salt, 1 to 2 tsp.
