Johnny really suffered watching this video, because that’s not real pizza and that’s an insult for those who have dedicated years to finding the perfect recipe and who today make spectacular pizzas, and they do it for a living. Not everyone can improvise pizza makers without a shred of information, so the suggestion that I feel like giving you, is to not trust anyone just for a beautiful smile, when it comes to cooking, because they could offer you completely wrong and unhealthy recipes.

I make dough at home myself, and there were a number of steps in here that I don't agree with, but there is something really unhelpful and cynical about this trend of Italian gatekeeping over things that aren't EXACTLY as they're made in Italy. In the US there are many pizza styles and all of them originate from Italian immigrants. Some of these pizza makers make it out like Neapolitan is the only true pizza, and only true when made in a very specific fashion without deviation. Johnny talking about there being too much yeast and breaking down the gluten structure is helpful information, but the gatekeeping is pretty tiresome.
"It's not a pizza" — well, it may not be a a very good pizza, or one that you or I would care for, Johnny, but it has a dough, sauce, and cheese… It's a damn pizza.
"can I say at this point, why he didn't use a short crust" 😂😂😂😂
I'd be very happy to see how Johnny makes his dough.

There's definitely worse, but yeah I understand the technical failures in there. Hope I get to try the world famous pizza. Had pizza in many cities, I'm not a fan of NY pizza, but I love pizza in Italy.

Well about the yeast, this kind of yeast is active from 25 to 45 celcius, it starts dying when higher. So he didnt actually kill it at the start. He put way too much though…
