Step 1: Old Forge Stuffed Pizza
* Pizza Crust
* 511 g bread flour
* 306 g water
* 10 g salt
* 15 g sugar
* 5 grams olive oil
* 3 g active dry yeast

* ¼ cup peanut oil
* 1 small white onion, thinly sliced
* 6 oz frozen spinach, wringed out of all its moisture
* 1 ½ lbs cheese (White cheddar, White American, provolone, mozzarella)
* 1 tablespoon dried rosemary needles
* 1 tsp garlic powder
* 1 tsp black pepper
* 1 tsp salt
* 1 tsp oregano
* kosher salt
* Bottle of olive oil

1) Stretch out one of the dough rounds on the pan with oil covering the pan.
2) Add the cheese. Add the onions. Add the spinach.
3) Mix the garlic powder, pepper, salt, and oregano. Sprinkle half the mixture on the top of the cheese. Reserve the rest.
4) Add the top layer of dough. Seal with your hand. Drizzle some olive oil over the top. Sprinkle the rest of the spice mix.
5) Add rosemary leaves.
6) Bake at 400 for 16-20 minutes or until golden brown.

Step 2: Colorado Mountain Pizza
* 4 cups whole wheat flour
* ½ teaspoon salt
* ½ teaspoon black pepper
* 3 tablespoons honey
* 1 tablespoon olive oil
* 1 tablespoon instant yeast
* 1 ¾ cup water

* Pizza sauce made with honey
* Mozzarella cheese
* Pepperoni
* Salami
* Spicy italian sausage
* Canadian bacon
* Meatballs
* Chopped bacon
* Red onion
* Green peppers
* White mushrooms

1) Remove for the bowl and stretch out on pan.
2) Cut a fingers length slit into the dough. Begin to braid the dough.
3) Add tomato sauce, cheese, and toppings.
4) Bake at 470 for 10 minutes.
5) Remove from the oven and top the crust with honey.

Step 3: Pizza Montanara (Fried Neapolitan Pizza)
* ½ teaspoon sugar
* ⅛ teaspoon active dry yeast
* 1/2 tablespoon olive oil
* 2 cups double zero flour
* 1 tablespoon kosher salt

* Crushed tomato with sea salt and garlic
* Pecorino
* Buffalo Mozzarella
* Basil
1) Heat up oil to 375 degrees in a large pan. Remove the dough from fridge and shape into a round.
2) Add the pizza to the oil and fry until golden brown.
3) Add tomato sauce, pecorino, and mozzarella.
