Sausage & Peas with Pasta
1 lb Pasta – cooked reserve 1/2 cup of Pasta Water
1 lb Italian Sausage – casing removed
3 4 Cloves Garlic – minced
1/2 C Frozen Spinach – drained
1 C Peas
1 tsp Basil
1 tsp Lemon Zest
1 tsp Fresh Lemon Juice
Cook Pasta according to directions and reserve 1/2 c pasta water.
In skillet brown sausage, add garlic about 3/4 the way through. Add peas & spinach, stir until
heated through. Add lemon juice, zest, parmesan cheese & pasta water. Stir. Add pasta to
pan and mix thoroughly.
Serve with additional parmesan if desired.
