Sick of boring breakfasts? This quick recipe is perfect for breakfast, and you can make it every morning. Say hello to Shakshuka’s Italian cousin, Eggs in Purgatory. Eggs gently cooked in a loaded tomato sauce, and served with crusty bread that you can toast for dipping. And we are topping ours like pizza for an extra special and super delicious breakfast that you’ll want to make every day. And guess what? It can be customized however you want, with whatever you have in the pantry or fridge. Use a tortilla instead of bread, add potatoes, whatever meat or veggies you have leftover, literally anything you want. Is this better than pizza? I’ll let you decide that. One thing’s for sure though, it is SO quick and easy and SO GOOD. Recipe below!
Pizza Eggs in Purgatory👇
2 tbsp EVOO
1 shallot
2 cloves garlic (minced, plus more to rub your crusty bread with)
2 tsp Calabrian chili
2 tbsp tomato paste
1 can cannellini beans (drained and rinsed)
28 oz passata
1/2 cup bone broth or water
1 oz parm (freshly grated)
6 eggs
Cup pepperoni
Crusty bread
Finish with:
Stracciatella (or ricotta, mascarpone)
Fresh oregano
Chili flake
Hot honey
1. Preheat the oven to 375°F and heat a large, oven-safe sauté pan or cast iron over medium low heat. Add a tbsp of EVOO, then add the shallots and a little salt and cook till translucent. Add the garlic and Calabrian chili and stir into the shallots, then make an open space in the pan and add the tomato paste. Smoosh the tomato paste into the pan and let it caramelize for :30 – 1 minute, then stir everything together.
2. Add the beans and stir till they’re all coated in the tomato paste mixture, then add the passata. To get everything out of the jar of passata, add the bone broth or water and shake it up, then add that to the pan. Season with salt, then bring to a gentle simmer.
3. Add the parm and stir it in, then carefully crack your eggs into the tomato sauce, nestling them in, and sprinkle the tops of each with a little salt.
4. Arrange the pepperoni around the eggs (however many you want — they do shrink up, so use a little more than you think you need), then transfer to the oven uncovered and bake for around 10-15 minutes until the white are set and the yolks are jammy.
5. While the eggs are cooking, toast your bread. You can use a toaster, or you can pan fry with a little EVOO and butter until golden brown on each side. Once golden brown/toasted, cut the end off a clove of garlic and rub the cut side onto the bread while it’s still hot.
6. When the eggs are cooked to your liking, remove from the oven and top with stracciatella/burrata, fresh oregano, chili flake and/or hot honey. Serve immediately with the crusty bread for dipping.

Putting a small bowl of water next to where you’re chopping onions or shallots prevents the eye burn.
