The history of Spaghetti Bolognese is a tale of an authentic Italian meat sauce that was completely transformed by international adaptation. The Original Sauce: The meat sauce itself originated in the Emilia-Romagna region of Italy in the late 18th century. The earliest recorded recipe for a meat-based pasta sauce was created by Alberto Alvisi, chef to a local cardinal in Imola, near Bologna. In Italy, this rich sauce is known as ragù alla Bolognese.

The Pasta Mismatch: In traditional Italian cuisine, ragù is never served with thin spaghetti. Because the sauce is heavy and chunky, Italians pair it with broad, flat, and sturdy egg pastas that can hold the meat, most famously creating Tagliatelle al Ragù. The Mayor of Bologna has even campaigned to clarify that authentic “Spaghetti Bolognese” does not exist in Italy.

The International Invention: The specific pairing of Bolognese sauce with dried spaghetti is largely an Anglo-American invention. It gained widespread popularity after World War I when cookbook author Julia Lovejoy Cuniberti recommended serving the Italian meat sauce with “macaroni or spaghetti” in a 1917 charity cookbook. Since dried spaghetti was cheap, accessible, and already popular in countries like the US and the UK, the adapted dish took off globally.
