15-Minute Penne Primavera

This is my kind of weeknight dinnerโ€”quick, easy, loaded with veggies, and on the table in about 15 minutes!

INGREDIENTS
โ€ข 1 lb penne pasta @barillaus
โ€ข 1 onion, chopped
โ€ข Olive oil
โ€ข Salt, to taste
โ€ข 4 cloves garlic, chopped
โ€ข 1โ€“2 bags frozen California Medley
โ€ข ยฝ cup frozen peas
โ€ข 1 jar tomato basil sauce @raoshomemade
โ€ข ยฝ jar water
โ€ข ยฝ stick butter
โ€ข 2 handfuls grated Parmigiano Reggiano
โ€ข Splash of heavy cream or milk, optional

DIRECTIONS

1. Bring a large pot of salted water to a boil and cook the penne according to package directions.
2. While the pasta cooks, add a generous drizzle of olive oil to a large pot. Add the chopped onion, season with salt, and sautรฉ until softened.
3. Add the chopped garlic and let everything cook together for about 2 minutes.
4. Add 1โ€“2 bags of frozen California Medley and ยฝ cup frozen peas. Cook for 3โ€“4 minutes.
5. Pour in the entire jar of tomato basil sauce. Fill the empty sauce jar halfway with water, give it a shake, and pour that into the pot too.
6. Bring the sauce to a boil and let it bubble for a few minutes.
7. Add ยฝ stick of butter and stir until completely melted. Add 2 handfuls of Parmigiano Reggiano and stir everything together. Add a splash of cream or milk if you want it a little creamier.
8. Taste! Add more salt if needed, then toss in your cooked penne until everything is coated.
