What’s for dinner? It’s the question we all ask ourselves (or get asked) every night. And on those nights when you want something delicious but don’t want to have a huge pile of dishes to clean up afterwards, one-pan meals are your best friend.
Our editors here at The Kitchn love one-pan recipes. From the iconic and saucy marry me chicken (developed by our very own editor-in-chief, Lindsay Funston) to creamy lemon dill tortellini, here are 17 of our editors’ favorite one-pan dinners.

This fried rice is constantly in Mara’s, our director of groceries and shopping, rotation. It’s perfect for when you want to go classic, or it’s a great starting point to create a version of your own.
It doesn’t get much cozier than this recipe, according to Jan. The rich red wine sauce is flavored with bacon, thyme, and beef broth, and the baby potatoes, mushrooms, and carrots or parsnips are cooked right in the sauce for a dish that warms you from the inside out.
Mexican Street Corn Chicken Chili
Micki isn’t usually the biggest fan of chili, but this one totally converted her. “It doesn’t have beans (which is usually my hold-up). Instead it has corn, along with jalapeños for a little kick and creaminess from the sour cream and cheese that’s stirred in at the end.”
Rachel said, “This one-pot creamy corn pasta has become my little last-minute summer dinner party trick.” It’s loaded with fresh corn and tomatoes, and blanketed in the most delicious, creamy, umami sauce.
“Since I discovered this recipe, we have made it over and over. All the flavors mingle amazingly well together (my 4-year-old even likes the salty olives!), and it’s a nice excuse to serve dinner with bread,” Lindsay said.
