One of my favorite things to do in Italy is visit the weekly markets. Every town has local vendors selling whatever fruits and vegetables are in season, and whenever I can, I ask them one simple question… “What should I make with this?”
This time I was holding the fresh green beans, and this was the recipe the lady told me to make.
One thing I’ve noticed in Italy and really throughout the Mediterranean, is that cooking is all about what’s in season. Right now that’s green beans and sweet tomatoes, so you’ll see them showing up in simple recipes like this all summer long. This isnโt a famous pasta dish you’ll find on a restaurant menu, but you will find it on family tables in Italian homes.
INGREDIENTS:
1 lb (500 g) bucantini or thick spaghetti
1/2 lb (250 g) green beans, trimmed
1 lb (500 g) cherry tomatoes, halved
4 cloves garlic
1 small chili pepper, chopped
Fresh basil
Extra virgin olive oil
Salt
Pecorino Romano
INSTRUCTIONS:
1. Bring a large pot of salted water to a boil. Add the green beans and the pasta to the same pot and cook until al dente.
2. Meanwhile, heat a generous drizzle of extra virgin olive oil in a large pan. Add the garlic, chili pepper, and a few basil leaves. Cook until fragrant.
3. Add the cherry tomatoes, season with salt, and cook until they begin to soften.
4. Transfer the pasta and green beans directly to the pan along with a splash of pasta water. 5.Toss until everything is well coated.
6. Turn off the heat and stir in a generous amount of freshly grated Pecorino Romano until creamy.

I normally make my pastas with a lot of different veggies. At least seven different ones. But now I will make the ones you are making. I made the one with peas last night. Why I never thought to make a puree of the sweet peas? It is genius. I always put peas in my pastas but never made like you make and it is sooo good it should be against the law!! The prepping of the green beans took me back to summers as a kid with my grandma, who always could tell when we were about to get bored and whiney, so she skillfully roped us into helping her do stuff, whether chores or cooking: "Can you please help make the beds, dry the dishes, put away the [whatevers], snap the green beans? Many hands makes light work!"
"What's 'snap the beans, mean Granma?"
