Red Pistachios were just dyed that color with Red #40 to hide blemishes and imperfections by importers. With better standards and and the California growers of today they don't need to dye them anymore, thus we now have green pistachios.
Oh we used to use the red pistachio shell and pretend they were our fingernails 😂
