Salmon Bites with Sun-Dried Tomato Dipping Sauce Recipe!
Time: 20 min. Servings: 8 (About 3 bites, 1 tbsp sauce)
INGREDIENTS:
1 pound center-cut skinless salmon fillet, cut into 1-in. pieces
1/2 tsp dried Italian seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 cup drained jarred sun-dried tomatoes chopped
1/2 tsp, plus 1/8 tsp table salt, divided
1/2 cup sour cream
1 tsp rice vinegar
1/4 tsp ground pepper
1 tsp sliced fresh basil
DIRECTIONS:
Preheat oven to broil with rack about 8 inches from heat source. Toss salmon pieces with Italian seasoning, garlic powder, onion powder, 1 tbsp sun-dried tomato oil, and 1/2 tsp in a medium bowl until combined. Arrange salmon pieces in an even layer on a large rimmed baking sheet lined with aluminum foil, spacing evenly apart. Broil until bottom side of salmon is lightly browned and salmon is cooked through, 6 to 8 minutes.
While salmon cooks, process sour cream, chopped sun-dried tomatoes, rice vinegar, black pepper, 1 tbsp sun-dried tomato oil, and the remaining 1/8 tsp salt in a mini food processor until sun-dried tomatoes are finely chopped and sauce is mostly smooth, about 20 seconds, stopping to scrape down sides as needed. Transfer dipping sauce to a small bowl; drizzle with remaining 1 1/2 tsp sun-dried tomato oil, and top with basil. Serve with salmon bites.
