3 day cold ferment in the fridge. Baked in a countertop convection oven. Had some gummy uncooked bottoms before but started baking it with the dough and cheese and then added layers. Bolognese meat sauce, mushrooms, pancetta, yellow cherry tomatoes, a bit of yellow pepper and zucchini and salami. 200 gm of shredded mozzarella and around 100 of grana padano. It was heavy in the most beautiful way…not heavy like my ex-wife.
