Roasted Cherry Tomato Burrata Dip ☀️
I tested over 100 dip recipes and this was my favourite… it is so easy and bursting with the freshest summer flavors! Served with @SimpleMills Organic Seed Flour Crackers because every great dip deserves a great scoop #SimpleMillsPartner
Ingredients:
Before baking:
-1 lb (450 g) rainbow cherry tomatoes
-1/4 cup fresh parsley, finely chopped
-Seasoning: 2 tsp salt, 2 tsp black pepper, 1 tsp chili flakes, 1 tsp oregano, 1 tsp basil
-1/3 cup olive oil
-2 whole garlic heads
After baking:
-8 oz (225 g) burrata filling / stracciatella
-1/4 cup fresh basil, chopped
-1/3 cup fresh parmesan, grated
-3 tbsp balsamic glaze (optional)
-1 package of Simple Mills Organic Seed Flour Crackers
Instructions:
1. Preheat your oven to 350°F (175°C). In a baking dish, combine the cherry tomatoes, parsley, olive oil, and all the seasonings. Toss until everything is well coated.
2. Slice the tops off the garlic heads to expose the cloves, then nestle them into the tomatoes. Drizzle the top of the garlic heads with extra olive oil and a pinch of salt.
3. Bake for 45 minutes, until the tomatoes are soft, blistered, and beginning to burst.
4. Let the dish cool for a few minutes, then squeeze the roasted garlic cloves out of their skins directly into the tomatoes. Mix everything together, gently breaking up some of the tomatoes as you go.
5. Top with fresh Parmesan, fresh basil, the burrata filling (stracciatella), and an optional drizzle of balsamic glaze.
6. Serve warm with Simple Mills Organic Seed Flour Crackers and enjoy!!

This looks really good, but I’m not a big fan of balsamic anything. Is there any alternatives you could suggest or would I be able to get away with just removing it altogether?
