Baked Vodka Ziti
Ingredients: 1 lb ziti or penne pasta, 1 jar (24 oz) vodka sauce, 15 oz ricotta cheese, 2 cups shredded mozzarella, ½ cup grated/powdered parmesan cheese, 1 egg (optional, to bind the ricotta).
Instructions:
1 Preheat oven to 375°F (190°C). Cook the pasta according to package instructions until just al dente; drain.
2 In a large bowl, mix the ricotta cheese, egg (if using), half of the parmesan, and a splash of the vodka sauce.
3 Toss the cooked pasta with the remaining vodka sauce. Stir the ricotta mixture gently into the pasta to create creamy pockets, or layer it.
4 Pour into a 9×13-inch baking dish. Top evenly with the shredded mozzarella and the remaining parmesan cheese.
5 Bake for 20–25 minutes until the cheese is melted and bubbling at the edges. Let sit for 5 minutes before serving.
