This bright, fresh Orzo Salad comes together with pantry staples and a simple homemade dressing featuring Madhava Organic Extra-Virgin Olive Oil, Organic Red Wine Vinegar, and Organic Agave for the perfect balance of richness, brightness and a touch of sweetness.

ORZO SALAD

1 1/2 cups dry orzo

1/2 medium cucumber, deseeded and cubed

1/4 medium red onion, finely diced

1 cup cherry tomatoes, halved

1/4 cup sliced almonds

2 tbsp nutritional yeast

1 can chickpeas, rinsed and drained

Handful chopped parsley, minced

Zest of one lemon (optional)

1 tsp red pepper flakes (optional)

Salt and pepper to taste

LEMON GARLIC DRESSING

1/4 cup Madhava Organic Extra-Virgin Olive Oil

1 tbsp Madhava Organic Red Wine Vinegar

Juice of one lemon

1–2 cloves garlic, crushed

1 tbsp Madhava Organic Agave

1/4 tsp dry basil

1/4 tsp dry oregano

Salt and pepper to taste

INSTRUCTIONS

Cook orzo according to package instructions. Drain, but do not rinse. Set aside.

Prepare the dressing by whisking together Madhava Organic Extra-Virgin Olive Oil, Madhava Organic Red Wine Vinegar, lemon juice, garlic, Madhava Organic Agave, basil, oregano, salt, and pepper.

In a large bowl, combine orzo, cucumber, onion, tomatoes, almonds, nutritional yeast, chickpeas, parsley, lemon zest, and red pepper flakes. Pour over dressing and toss well.

Adjust salt and pepper to taste. For best flavor, chill for at least 1 hour before serving.
