what you need
fresh pappardelle / pesto: basil, pine nuts, olive oil, garlic, lemon zest, parmesan, double cream / toppings: cherry tomatoes, sun-dried tomatoes, bocconcini, fresh basil, honey pine nuts

how to make it
blanch the basil, ice shock it, dry it well. toast pine nuts, blend until fine, add basil, olive oil, garlic, lemon zest, salt, pepper, and a splash of water. blend smooth. add parmesan and double cream and blend until thick and pourable. chill until thickened. cook pappardelle al dente, reserve pasta water. warm pesto gently, add pasta, loosen with pasta water until silky and glossy.

twirl into bowls. cherry tomatoes, sun-dried tomatoes, bocconcini, fresh basil, honey pine nuts on top. don’t mix them in. drizzle of olive oil to finish.
