Mussels are my favorite. I usually steam them in a white wine broth, now I have to try this with pasta.

I really respect how Denis cleans as he goes. No splatter or drops have time to harden so clean up is much easier at the end. That discipline and attention to detail clearly goes into the food too. Lucky staffmates and guests!

I really don't know why he is putting salt in all three basket when he only used the big basket for the pasta. They are all in the same boiling water so why salt all three?
THIS is real Italian pasta… bronze die extrusion, good semolina flour and proper risotto finishing tecnique… anything else is not Italian. Bravo! 😊
