
I love this Italian restaurant close to my home that offers a delicious eggplant parmigiana. I have been trying to find the recipe online and nothing resembles the one I buy at this restaurant. Each layer is a perfect little uniform rectangle, that has been sliced very thin, almost like pasta. You can’t see the borders of the eggplant. The texture is also quite different, each layer has this bread like texture. Has anyone seen a recipe like this? I want to learn how to make it. Picture from actual restaurant.
