In Le Marche, one of Italy’s most iconic street foods, Olive Ascolane, is rooted in family tradition, and Stanley Tucci goes straight to the source.
Here, he meets the family who first created these olives over 40 years ago.
Initially intended to be shared at celebrations and special occasions, they are now served in a paper cup, as simple flavour-packed street food.
Each olive is carefully cut, stuffed with a rich mixture of pork and beef, which is then combined with parmesan, nutmeg, and egg yolk, before being reconstructed, breaded, and fried to golden perfection.
Crisp on the outside and indulgent within, these olives are more than a snack, they’re a tradition. And in Le Marche, there’s only one way to eat them: with your hands.
