Ingredients (for one 8-inch / 20 cm cake)
* 4 large eggs
* 120 g. granulated sugar
* 120 g. cake flour (or all-purpose sifted)
* 30 g. unsalted butter, melted
* 1 tsp vanilla extract (optional)
* Pinch of salt

1. Preheat oven to 180°C
Line pan with parchment.
2. Warm eggs + sugar over bain-marie until slightly warm.
3. Beat until pale, thick, and ribbon stage.
4. Fold sifted flour gently in 2–3 additions.
5. Fold melted butter into batter carefully.
6. Bake 20–25 mins until golden and springy.
7. Cool completely before slicing.

For whip cream

Cream
* 500 g mascarpone
* egg yolks (optional)
* 100 g icing sugar
* 250 ml cold heavy cream

Step-by-step

1. Make coffee

* Brew strong coffee or espresso
* Cool completely
* Add alcohol if using

2. Make mascarpone mixture

* Whisk egg yolks + sugar until pale and creamy

3. Add mascarpone

* Mix mascarpone slowly until smooth
* Do not overwhip or it can split

4. Whip cream separately

* Soft-medium peaks
* Fold gently into mascarpone mixture
