

I got an indoor electric pizza oven for Christmas a couple of years ago and have been using it to make Neapolitans. Finally decided to try a NYC style and I think it's the best pizza I've ever made. This is the first pizza that tasted like it came from a pizzeria and not my oven. I followed a pretty standard recipe:
Dough:
KA Bread Flour: 100%
Water: 62%
Salt: 1.75%
Olive Oil: 1%
Sugar: 1%
Instant Dry Yeast: 0.3%
48 hour cold ferment in the fridge
Sauce:
Tomatoes: 28 oz can whole peeled san marzano drained and hand crushed
Salt: 1 tsp fine sea salt
Dried Oregano: 1/2 tsp.
Garlic Powder: 1/4 tsp.
Olive Oil: 1 tsp
Mix well and let it sit overnight in the fridge
Cheese:
A dusting of pecorino romano directly on the sauce and topped with three parts low moisture whole milk mozz and one part sharp provolone
It was pretty greasy without any toppings. I'm not sure how it would turn out with toppings.
