This is Episode 2 of my A-Z Tomato Series, where I cook one tomato recipe for every letter of the alphabet, and you decide what comes next. You voted, and B is for bruschetta. You’re probably making bruschetta wrong 🍅✨ And it comes down to three simple things.
1. Most people drain the tomato juice to avoid soggy bread, but that liquid is actually the best part. When your tomatoes are good, that juice is pure flavor.
2. The second key is the bread. You need something sturdy enough to absorb the tomatoes without falling apart, a good ciabatta works perfectly. Toasting is non-negotiable. That crispy surface is what makes the whole dish work.
3. And finally, timing. Bruschetta should be served immediately after assembling, or the components should be kept separate so the bread stays crisp.
