Don’t have venison sausage? Just add one teaspoon each: Salt, Garlic Powder, Onion Powder, Italian Seasoning; ½ teaspoon each Black Pepper, Paprika and ½ teaspoon Red Pepper Flakes (optional) to one pound ground venison.

Full Recipe:

Ingredients:
* 1 lb venison sausage
* 20–24 jumbo pasta shells
* 1 tbsp olive oil
* 1 small onion, diced
* 3 cloves garlic, minced
* 1 cup ricotta cheese
* 1 ½ cups shredded mozzarella (divided)
* ½ cup grated Parmesan
* 1 egg
* 2 cups marinara sauce
* Salt & pepper to taste
* Optional: fresh basil or parsley

Instructions:
1. Cook pasta shells in salted water until al dente, then drain and set aside.
2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, then add garlic.
3. Add venison sausage and cook until browned, breaking it up as it cooks.
4. In a bowl, mix ricotta, egg, Parmesan, and 1 cup mozzarella. Stir in cooked venison mixture.
5. Spoon marinara sauce into the skillet (or baking dish if transferring).
6. Stuff each shell with the venison mixture and place into the sauce.
7. Top with remaining mozzarella cheese.
8. Cover and cook until heated through and cheese is melted (or bake at 350°F for ~25–30 minutes).
9. Garnish with fresh herbs and serve hot.
