creamy caramelized onion braised short rib rigatoni 🤌🏻

ingredients:
short ribs:
* 2–2.5 lbs bone-in short ribs
* salt + pepper
* 1 small onion, chopped
* 3 garlic cloves, minced
* 1 tbsp tomato paste
* ½ cup red wine
* 2–2½ cups beef broth
* fresh thyme
* 1 bay leaf

onion cream sauce:
* 3 large yellow onions, thinly sliced
* 3 tbsp butter
* 1 tbsp olive oil
* pinch of salt
* ¾ cup heavy cream
* ½ cup freshly grated parmesan
* ½ cup freshly grated gruyère

pasta:
* 12–16 oz rigatoni
* reserved pasta water

instructions:
1. preheat oven to 325°
2. pat short ribs dry, season with salt + pepper, and sear until deeply browned on all sides. remove and set aside
3. in the same pot, sauté onion + garlic for a few minutes, then stir in tomato paste and cook 1–2 minutes
4. pour in red wine and let it reduce by about half
5. add beef broth, thyme, and bay leaf
6. return ribs to the pot (liquid should come about ¾ up the ribs), cover, and braise for 2.5–3 hours until fall-apart tender
7. let ribs rest in the liquid for 10–15 minutes, then shred (skim excess fat if needed)
8. in a separate pan, cook sliced onions in butter + olive oil with a pinch of salt over low-medium heat for 30–45 minutes until deeply golden and jammy
9. add heavy cream and let it gently simmer, then stir in parmesan + gruyère until smooth
10. add a couple spoonfuls of the braising liquid for extra flavor
11. cook rigatoni in salted water until just under al dente, reserving pasta water
12. add shredded short rib to the sauce, then add pasta + a splash of pasta water
13. toss until glossy and coated, adding more pasta water as needed
14. finish with black pepper, extra parmesan, and a small knob of butter for that silky finish ✨

  2. More minced garlic, cracked black pepper and fresh reggiano vs gross powdered stuff. It needed 3x braising liquid – serious shame to waste it.
