Sweet baby Jesus Son of Mary. Thats not how you eat ragu ala bolognese.
I think so many people have got used to supermarket pasta that they have forgotten, or perhaps didn't even know the difference with high quality fresh pasta. My Grandmother was from Rimini and made the best lasagna al forno, a 3 day process, never encountered anywhere that can match it.
My ultimate favorite dish of all times. Italian bread on the side. Glass of red wine.

Great video Michael. You need to have the ragu alla bolognese which is the traditional way served with Rigatoni or Tagliatelle Pasta. Italians don't eat Spaghetti and Bolognese . Spaghetti bolognese is not a traditional dish in Italy; it is a dish that has evolved from its origins in the United States, where it was popularized by Italian immigrants.. When you have it with rigatoni or tagliatelle the bolognese is held to the pasta which is much better.

I’ve never ever ever had a bad meal at Pellicis and I only go a handful of times a year. Nev is an absolute joy and has seen me through the rough and smooth and to this day still calls me Mr Railway!
Spaghetti bolognese is not an authentic Italian dish but an Italian inspired British dish.
When you said "not watery" – means they probably added the milk. Otherwise though (having seen other "Italian" dishes from Pellici's) – none of it is authentic. A step up from most places that claim it though.
Reminds me of the bolognaise that I’d have as a kid if I was off school and my dad took me to work. It was at a cafe in Kensington called Luigi’s that hasn’t existed for many years. He’d meet his colleagues in the later morning (he’d start work at 7am driving his van into London) and this’s huge mound of the most delicious spaghetti bolognaise would arrive 🙌🏻😋
