Italian White Bean Soup
1 tbsp olive oil
1 lb Italian sausage
1 onion diced
3 stalks celery diced
1-2 carrots diced
5 minced garlic cloves
1 tsp Italian seasoning
1/4 tsp red pepper flakes
A sprig of rosemary
1/2 tsp onion powder
1/2 tsp garlic powder
Salt/pepper
3 tbsp flour
6 cups chicken broth
2 cans white beans rinsed and drained
1 bunch of kale chopped
1 cup heavy cream
1/4 cup parmesan
Heat oil, cook meat until brown and set aside. Add in onions, carrots and celery. Cook for 5 minutes. Add in garlic for 1 minute. Add flour and seasonings for 2 minutes. Add broth and rosemary. Bring to a boil and simmer for 15 minutes. Add beans, kale, cream, sausage and parm. Season again and simmer for 5 minutes.

Ehhh…
Forget the flour for thickener. Mash up some cannellini beans instead. Works great!!!
