At Gui’s Burger in Ashiya, the idea is simple.
Use the burger as a way to tell the story of Wagyu.
On Tabelog alone, there are nearly 10,000 burger shops across Japan.
Less than 10% mention working with Wagyu.
This is one of them.
Built around the philosophy of Humans of Wagyu, the restaurant exists to connect the people behind the beef. Farmers, butchers, chefs, and everyone in between.
We visit farms and auctions across Japan, hearing the stories directly from the people raising and handling the cattle.
The menu stays intentionally simple.
Three core burgers, each sourced from a different Wagyu farm.
And one limited edition that introduces a new producer every month.
This month features Suzuki San from Yamagata.
A 200g patty, minced daily from selected cuts, paired with a housemade chimichurri.
Parsley, garlic, vinegar, olive oil.
A classic Argentine sauce that balances the richness of Wagyu.
A different way to experience Wagyu.
