method:
boil pasta in salted water until cooked, then drain and set aside. in a pan melt butter and pour in milk and double cream, heating gently. add the cheddar and red leicester first, stirring until melted, then add mozzarella and mix until smooth and stretchy. stir in chili paste and black pepper, then add the pasta and mix until fully coated and glossy, adding a splash more milk if needed to loosen the sauce. serve hot and finish with a bit more cheese on top for melt and stretch.
