Ingredients:
– 1 box Red Lobster Cheddar Bay Biscuit Mix
– 1/2 c water
– 1 c cheddar cheese, shredded
– 1 tbs olive oil
– 1 shallot, chopped
– 1 mini sweet pepper, chopped
– 3 garlic cloves, minced
– 1 cup crawfish tails
– 1 tsp creole seasoning
– 2 tbs softened cream cheese
– 2 tbs pizza sauce
– 1/4 c parmesan, grated
– 1 c mozzarella, shredded
– 1/4 c butter
– Oil for frying

Directions:
In a pan over medium heat, add olive oil and sauté the shallot and pepper for 4 minutes. Add in garlic and cook an additional 30 seconds.
Add in crawfish tails and season with creole seasoning. Stir in cream cheese and pizza sauce.
Cut the heat and mix in parmesan and 1/2 c up the mozzarella. Remove and set slide to cool.
In a bowl add the Red Lobster Cheddar Bay Biscuit Mix and put the Garlic Herb Blend aside. Add in water and cheddar cheese. Fold together until a thick dough forms.
Flour your rolling surface and place the dough down. Use a roller to flatten it to 1/4 of an inch thick. Shape it into a rectangle and cut it into 8 smaller rectangles.
Scoop about 1 1/2 tbs of the crawfish filling on 4 of the biscuit rectangles. Add the remaining mozzarella on top and place the remaining biscuits on top. Seal the edges by pressing a fork around the edges.
Place in the freezer while you heat your oil to 300 degrees F.
Remove the pizza pockets from the freezer and fry for 3-4 minutes or until golden brown and dough is cooked throughout. Add to a wire rack.
Combine the Garlic Herb Blend to the butter, brush on top and enjoy!
