Personally for me I think you're missing the onions and tomatoes. Pasta dish reminds me of a Spanish omelette it's done with potatoes rather than pasta. But they are both delicious, No doubt.. I am from Sicily but I now live in the United States.
I wish these recipes had other measurements. I do not know how much 250 grams of pasta is. Do you weigh it before cooking or after? I guess I could just eyeball it.
Why don't you just break the pasta before you cook it, or buy fideo cut, half-cut, or vermicelli? It makes no sense to cook full-length spaghetti and then try to cut it into pieces. There are spaghetti products already cut like that.
Non parlando inglese non ho potuto comprendere i commenti ,sono italiana e questa ricetta è un salva cena ,in economia,quando non c'è molto da mangiare,avere la pancetta e tante uova era da ricchi😊😊…… Non si tagliano gli spaghetti,si fanno prima rosolare in olio,si mette l'uovo 1 o 2 non di più,poi si gira e si mette sopra un po' di passata di pomodoro e formaggio tritato o i rimasugli di più formaggi( se ce fossero stati) e un po' di origano,e si porta a cottura col coperchio,cioè fino a quando il formaggio è sciolto. Brava nel girare e bello il fondo dorato😊
