1 sheet puff pastry

Pizza sauce:
100-120g Tomato Puree
2 x garlic cloves
Chopped fresh or dried basil
Salt and pepper

200g mozzarella

Egg for brushing:

For brushing
Chopped parsley or basil
2-3 tbs olive oil
1 crushed garlic

Preheat your oven to 180C

Mix your pizza sauce ingredients together. Itโ€™s a dry paste because otherwise the pastry will get soggy.

Spread the mixture over the pastry and spread the cheese. Roll it up tightly like a cinnamon roll and slice down the middle to get two halves. Twist the halves over each other to create a long Babka shape. Place on a dish lined with parchment paper (I put mine diagonally as it was quite long)
Brush all over with egg wash especially around and inside the layers of pastry as that will keep it closed when cooking.

Bake for 30 -32 minutes (I turn my oven down to 170C after 15 min) so that I get the inside nice and cooked before it gets burnt on top. I also did the last 3-5 min on pizza setting to get the bottom crunchy.

Brush with the garlic parsley oil as soon as it comes out of the oven
