Ingredients (Serves 2–3)
250–300 g pasta (penne, rigatoni, or fusilli)
3–4 spicy Italian sausages
2–3 tbsp sun-dried tomatoes, chopped
2 tbsp mascarpone cheese
1 small splash pasta cooking water (optional, to loosen sauce)
Salt and black pepper, to taste
Small handful fresh basil, torn
Optional: grated parmesan to finish
