Sunday Short Rib Red Sauce
Ingredients:
โข 2 lbs boneโin beef short ribs
โข 4 Italian sweet sausages (optional)
โข 6โ12 almostโcooked meatballs (optional)
โข 1 white onion, diced
โข 4โ6 garlic cloves, minced
โข 1 can tomato paste (6 oz)
โข 1 cup red wine or beef broth
โข 2 cans crushed tomatoes (28 oz each)
โข 6โ8 fresh basil leaves
โข 1 tbsp Italian seasoning
โข 1 tsp salt
โข 1/2 tsp pepper
โข 2 tbsp neutral oil
Instructions:
Heat oil in a large pot over mediumโlow heat.
Sear the short ribs on all sides.
Remove ribs and add onion and garlic. Cook until browned.
Stir in tomato paste and cook 1โ2 minutes.
Deglaze with red wine or broth.
Add short ribs back to the pot.
Pour in crushed tomatoes.
Cover and simmer on low for 2โ4 hours.
Season with salt, pepper, and Italian seasoning.
Add basil and optional meatballs during the last 20 minutes.
Remove ribs, pull meat from the bones, and return meat to the sauce.
