โ€‹Sugar: 80g – 100g
โ€‹Yeast (Lievito di birra): 7g (Dry) or 15g (Fresh)
โ€‹Butter (Room Temperature): 60g (for the dough) + 250g (for layering/lamination)
โ€‹Egg: 1 large
โ€‹Salt: 1/2 tsp
โ€‹Aromatics: 1 tsp Vanilla extract and a pinch of Orange Zest (for that classic Italian scent)
โ€‹2. Step-by-Step Instructions
โ€‹Step 01: Preparing the Dough
โ€‹In a small bowl, mix the warm milk with yeast and a tablespoon of sugar. Let it sit for about 5 minutes until frothy.
โ€‹In a large mixing bowl, combine the flour, salt, remaining sugar, orange zest, and the egg.
โ€‹Pour in the yeast mixture and knead until a rough dough forms.
โ€‹Add the 60g of butter gradually and knead for about 10 minutes until the dough is smooth and elastic.
โ€‹Cover and let it rise in a warm place for about 2 hours (or until it doubles in size).
โ€‹Step 02: Lamination (Butter Layering)
โ€‹Roll out the risen dough into a rectangular shape.
โ€‹Flatten the 250g of cold butter between two sheets of parchment paper into a smaller square. Place the butter block in the center of the dough and fold the edges over to seal it.
โ€‹Gently roll the dough out into a long rectangle, fold it into thirds (like a letter), wrap in plastic, and refrigerate for 30 minutes.
โ€‹Repeat this rolling and folding process 3 times to create those beautiful flaky layers.

โ€‹Roll out the final chilled dough into a large rectangle (about 5mm thick).
โ€‹Cut the dough into long, skinny triangles.
โ€‹Starting from the wide base of the triangle, roll it up toward the tip to form the crescent shape.
โ€‹Place them on a baking tray lined with parchment paper and let them rise again for 1 hour.
โ€‹Step 04: Baking
โ€‹Preheat your oven to 180ยฐC.
โ€‹Lightly brush the top of each cornetto with a beaten egg (egg wash) for a golden finish.
โ€‹Bake for 15-20 minutes or until they are golden brown and crispy.
