In my kitchen one-pot meals are always the winners on the menu. I call this specific one-pot meal baked rigatoni. I picked up the idea of this dish many many years ago from the Food Network. And to this day I still make it for my family.

I am using a combination of jarred marinara sauce and homemade marinara. That way I can incorporate the fresh flavors of olive oil, garlic, onions, and tomatoes which are lacking from the jarred marinara sauce. Believe me, doing so makes a huge difference.โค๏ธ

    Making my own pasta and noodles is meditation for me. My husband jokes that we eat way more pasta, noodles, and homemade bread when Iโ€™m unsettled and need to work through my emotions. And there are days when jarred sauce and dried grocery store pasta are on the menu, and thereโ€™s nothing wrong with either. I consider myself lucky that I love cooking and that my family cares about eating nutritious food.

    I just made some of this todayโ€ฆ..didnโ€™t look half as appetizing as yours. Iโ€™m always amazed how you make this from scratch and looks waaaaaay better then the boxed stuff.
