It’s simple Italian, packed with nutrition, and is such a comforting soup recipe that’s an easy weeknight dinner for the family!

Ingredients:

2 cans of drained chickpeas
2 tomatoes quartered
2 cups vegetable broth
2 cups packed baby spinach
2 garlic cloves
2 rosemary twigs (remove needles)
3 tablespoons olive oil
Salt and white pepper
*Optional slice of bread

Recipe:

In a medium sized saucepan, on medium heat, drizzle olive oil and add in whole garlic cloves. Sauté until golden. Remove and discard garlic.

Add in the quartered tomatoes with the rosemary needles and simmer for 5 minutes.

Add chickpeas. Bring to a boil and lower temperature. Cover and simmer on low for 30 minutes.

Dump in a few chunks of bread for a creamier consistency.

Use an immersion blender and blend well.

Strain the soup and return any chunks back through the immersion blender process.

Return the soup to the skillet and warm again.

When the soup comes to a boil, add in salt, pepper, and spinach.

Stir. The spinach will wilt in 2-3 minutes.

Serve into preheated warm soup bowls and enjoy!!

  1. I'm not much for soups but I bet that would be fantastic tightened up a bit and painted on a plate like a hummus sauce or in a wrap
