another beautiful day on the Amalfi the
boys have just gotten up better go get
some breakfast now in a and then
we’re gonna go hang out down by the
beach for our cooking class a little bit
later today here in Amalfi definitely
looking forward to that supposed to be a
beautiful garden where they’re gonna
teach us how to cook a few meals and
we’re gonna eat good we’re gonna go lay
out at the beach for a little bit after
we eat let’s have a day let’s have
another day

Square a couple of cappuccinos Mike with
a double espresso a couple of fresh
juices can’t beat it boys just got done
spending a little time down at the
atrani beach about to head over to
Amalfi right now we have a cooking class
a little bit outside Amalfi and probably
like an hour hour and a half go down to
Amalfi walk around a little bit and head
down to that cooking class here soon

not a cloud in the sky can’t beat it
really this place is one of the most
beautiful place I’ve ever seen in
pictures it doesn’t do it justice in
real life but you gotta come out here
and see it yourself

we are going to be cooking today

welcome everybody so my name’s Kayleigh
again I’m going to be taking you through
the Garden today we’re going to go
through the garden first talk about the
olive trees and stuff like that all the
way up and then when we reach to the top
we’re going to share a kitchen together
a big table we’re going to join in and
prep some food and uh sit down and enjoy
a nice meal together we’ll talk about
the menu when we’ll get up we’ll see
Mama rosettes is already in the kitchen
making it something already so to start
with so online we write that this is a
cooking class but it’s more than that
this is an experience that we’ve created
and it’s all about being in touch with
everything and be involved and feel
everything touch everything we don’t use
any pesticides or anything in the garden
so if you want to touch anything or eat
it straight there and then you can take
it you can you can NAB it basically get
involved get your hands dirty and does
everybody drink wine

it’s a wine today anyway and then we’ll
find out if anyone’s really fast
I came here four years ago and uh Last
year me and my partner was working in a
hotel and it was just really fast-paced
it wasn’t when we came to Italy we
thought we were coming here for the
Dolce Vita what everyone described it as
and we was just chopping and changing
shifts and really just not spending any
time in the actual Sun of the summer
when you want to be out and enjoying
yourself we ended up meeting Silvio and
his friend Antonio who might be missing
you guys keep saying what he was trying
to do here they rented this place three
years ago showing everybody that you can
have everything you can enjoy the life
and be outside we hope to share that
with you today hopefully we’ll leave
here as friends rather than strangers

if you look closely here these are not
olives but they’re the start of the
flowers that you can see soft into
Sprout which will then be where the
olive stuff there’s two types of olive
oil that we do the first one we do is
obviously the extra virgin olive oil so
you do that by doing a one press in the
in the big grinder and you get about 80
murky water and 20 is extra virgin olive
oil and that’s obviously the main one
that we use it’s the most healthy for
you and and organic even people you’ll
see here on the beach putting it on
their skin it’s a sunbathing it they
love it but yeah these trees two trees
particularly trees behind you a recipe
at about
so they have such a large root system
that they will genuinely just last
forever they’re pretty Indestructible
with the olive trees to harvest them
obviously normally olive trees are on
pretty flat big landscape being on the
coast here with the landscape that we
have we can’t bring the olive the the
big machines up here obviously so the
easiest way for that to do we lay all
the land with Nets it’s important to do
that because when they touch the
soil within literally 10 minutes they’ll
start to ferment and they’ll start to
like a lemon as well and an orange
they’ll start their porous and they’ll
start to absorb
and we’ll send the children up into the
trees to start shaking the trees we’re
too heavy and big because the the
branches are a little bit thin so the
kids go up there and shape them to a bit
of free labor as well
the soil here is completely volcanic
soya so it means that our stuff grows
really strong really well really
flavorful so here we’ve got our cabbages
cabbages are mainly good in season about
January February but what we’re doing
now is actually leaving them to
overgrown so not a lot of people know
with the Cabbage when you let it
overgrow that’ll produce flowers which
will then seed and that will give us our
cabbages for the next year at the moment
a garden is pretty green so we’re in an
in-between Sage at the moment with
obviously
took quite a good time to go it’s quite
full of Garden at the minute although
not all of it’s edible during the summer
you mainly only really get zucchini
eggplants and tomatoes really yeah we
want to try one
they’re quite sweet at the moment
so yeah we’ve got a few different ones
we’ve got some cherry tomatoes red
yellow ones and some some Marzano ones
as well the loved ones we can call them
samosana here because we’re in the
Naples area so unless you’re in this
region you can’t call them that I think
otherwise they’re called Pamela you’re
more no more smart style broccoli that
you’ll see so you can see yeah it’s
really flowered and you can start
spreading the same cake
we’ve got a fig tree another big Olive
Tree again but yeah the sequel beans
season about
August September they’ll be nice
so there’s actually quite a big lie
about the Amalfi Coast
you see these really really big lemons
everyone thinks that that’s just because
we’re the Amalfi Coast and they grow
that big it’s not actually a lemon it’s
a chidra it’s cool and it’s still from
the citrus family it’s similar to a
lemon you see how inside a lemon you’d
have a quite a large flesh and a small
White Cliff this one actually has a tiny
flesh pie inside and a huge white pith

smoked mozzarella it’s made by roses
uncooked what we’re going to do with the
problem we’re going to put it inside two
lemon leaves that’s what it’s going to
do is the essential oils is going to go
into the bottle up so after that we’re
going to be doing some in gnocchi this
afternoon sound good sounds great is
that enough dude yeah

when you do a fresh pasta no mix for a
long time so when we’re using the wheat
flour it’s usually just water we add to
it maybe sometimes some of the pictures
up or just water and flour that produces
a lot of absolutely all that dry when
you’re making something like a
tortellini or ravioli like for every 100
grams of flowers
you just work your own dough it’s a
different one but what you’re going to
get is a softer texture and like a more
pillowy
and richer as well

again speechless honestly one of the
coolest I’ve ever done like you’re

Italian Garden everything’s so fresh
they teach you what you do there they
welcome you like one of their own family
members this honestly might have been
the one of the best overall experiences
I’ve ever had in my life truly two of my
best friends great food great great
company the most beautiful place in the
