260g/9oz of Italian 00 flour, plus more for dusting

  2. I love quick and simple pasta dough. A food processor does look easier than a bowl I’m used to. Personally I find adding just a bit of water and olive oil to my mixture might not be traditional but it sure comes out just right. If I don’t add any oil/water or too much then my pasta roller doesn’t like the dough. But when it’s balanced correctly, perfecto.

  3. This took me 1 hour and 42 minutes. But that includes driving time to go buy a scale, food processor and a bottle chianti.
