Sicilian orange salad
Sweet, tangy and refreshing
Ingredients:
3 oranges
1 fennel
1 spring onion
Olive oil
Salt
Chili pepper flakes
Steps:
1. Peel the oranges with a knife removing the white coating. Slice them up.
2. Trim the fennel bulb and remove any tough outer layers. Slice the fennel bulb thinly using a sharp knife.
3. Thinly slice the spring onion.
4. Scatter the sliced fennel and spring onion over the oranges.
5. Drizzle the salad with olive oil, salt and chili pepper flakes to taste and give it a good mix.

In Italy it’s not common to pair fruit with Savory dishes but this dish is an exception it boldly combines sweet and Tangi oranges with some crisp and refreshing fennel a little bit of spring onion gives a depth while a simple dressing of olive oil salt and chili flakes ties it all together
