Shakshuka (North African Style Poached Eggs in Tomato Sauce)
* Diced tonatoes (canned) 1 can
* Onion 1 small – medium size
* Red Bell Pepper 1 pc
* Tomato paste 1 tbsp
* Garlic paste 1 tsp
* Egg 3 pc
* Olive oil
* Cayenne pepper
* Paprika
* Salt
* Pepper
* Parsley (for garnish)

1. Finely chop the parsley
2. Remove the seeds from the red pepper
3. Dice the onion and the red pepper
4. Prepare a cast iron pan, heat it and pour in olive oil
5. Add onions, garlic and sweet peppers, and stir-fry until the bell peppers become soft and the onions are colored
6. Add diced tomatoes and 1 spoonful of pure ketchup and stir-fry evenly
7. Add cumin powder, cayenne pepper, paprika and salt for seasoning, cover the pot, and simmer on minimum heat for 10 minutes
8. Dig out a few holes in the tomato sauce, beat the eggs, open the lid and cook for 3 minutes
9. Keep the heat low, then cover the pot and simmer for 1 to 2 minute
10. Garnish with chopped parsley and serve
