Italian Lentil Soup l The cheap & Easy One Pot Recipe



Lentil soup is a classic thick, hearty vegetarian soup. It’s simple, easy to make, and healthy too. When it comes to making it there is not really one set recipe.
In this recipe I used spinach which gives it colour. Mirepoix vegetables (carrot, celery, onion) make it a good budget friendly option.

Also it’s made using only one saucepan, so it saves on the washing up.

If you don’t have dried oregano, you could always use fresh or any dried herbs you have to hand. If you don’t want to use vegetable stock you could always replace it with water. After all this is your recipe.

Italian Lentil Soup Please unwind, relax and enjoy… Rinse 226g (8 oz) brown or green lentils Try not to lose any Carrot Peeled Chop or dice Celery 1 stick, diced 30ml (2 tablespoons) olive oil Turn on to a low – medium heat… Add the carrot the celery Medium – large onion Roughly dice

Add diced onion Cook until soft (about 7 – 10 minutes) 42g (1 + 1/2 oz) tomato puree Stir for 5 minutes to flavour veggies and stop puree burning 400g (14 oz) plum tomatoes Gently crush 1 teaspoon dried oregano Add to pan Along with the lentils Vegetable stock

2.2 pints (1250ml) to make the soup Bring to a boil Once boiling Reduce heat Cover & simmer until lentils are just tender (30 – 35 minutes) Give it a stir Turn off heat Add 180g (6.3 oz) baby spinach, rinsed will wilt with the heat Season to taste

  2. I think who cooked this ,has no idea of cooking! For one thing, you never put the oregano at the beginning because it gets bitter. Also, all that tomato is enough for spaghetti sauce, in this has no sense.
    Overall, a nonsense recepie…
