But this size was fine; I got about 20 meatballs from a pound of meat, which was perfect. I seared the meatballs too, which is not technically traditional, but meatballs are not technically traditional either, so this is a flavor-based decision. Searing the meatballs and then cooking the soup with those yummy browned bits left behind makes for a tasty final result! Them as small as you can you should get at least 20 meatballs with one pound of meat traditionally you would not fry the meatballs in Italian wedding soup but I do you’re going to get such a better flavor look at all those brown bits that are left behind that’s what’s going to
Be the flavor of your soup you’re going to go in with some onions carrots and garlic and once that garlic is fragrant I go ahead and fill her up with some chicken broth bring it to a boil and then add your meatball lower to a simmer let those finish cooking for 15 minutes

I think it's more about the ingredients than actually made in Italy. I know I never had it while living there, but I definitely had all the ingredients at one time or another, if not nearly every day. For sure the parm was a staple and spinach, orzo and the garlic!

in Algeria it is called bird's nest soup we add chickpeas and celery but without cheese and without spinach it is very delicious
