  10. Thx you JP. You change my cooking with the Oh so important basics. Onion first, no water in mushrooms, maillard reaction, garlic when liquid is about to be added. Thank you ♥️♥️♥️. Question/humble suggestions. Why not tell us what too look for with wines? Grapes or winery or aged? Wine is different in the whole world, the availability at least.   11. Not that I have ever considered doing it before, out of genuine curiosity, why is processing sausage a big no-no? It would be no fun if I didn't make an educated guess eh? …. Does the act of processing before cooking the sausage negatively affect the texture which in turn affects the flavour?
