Creamy Cheesy Pasta

Ingredients:
* 300g pasta
* 100g unsalted butter
* 2 tablespoons all-purpose flour
* 400ml heavy cream (30% fat)
* 200ml milk
* 130g melted cheddar cheese
* Spices and salt to taste
* 200g grated mozzarella cheese
* 250g cherry tomatoes
* 100ml water
* Chopped green onions for garnish

Instructions:
* In a pot, cook the pasta until it’s partially done. Drain the pasta in a colander and set aside.
* In a skillet, melt the unsalted butter over medium heat. Once melted, add two tablespoons of all-purpose flour and mix well.
* Gradually pour in the heavy cream and milk, stirring constantly to prevent lumps. Continue stirring until the sauce thickens.
* Add the melted cheddar cheese to the sauce and keep stirring until the cheese is fully melted and the sauce becomes smooth and cheesy.
* Season the sauce with spices and salt according to your taste. Slowly add the grated mozzarella cheese, stirring until it’s completely melted and the sauce becomes creamy.
* Transfer the partially cooked pasta and halved cherry tomatoes into the sauce. Mix thoroughly to ensure the pasta is evenly coated with the sauce.
* Add 100ml of water to the skillet and let the dish simmer for 5-7 minutes, allowing the pasta to cook fully and the sauce to become thick and aromatic.
* When serving, sprinkle the dish with chopped green onions to add freshness and flavor.
