  2. The heatbreaking thing is that in the US, through 20th century immigration from Europe, we benefitted from hundreds of years of finely crafted baked goods. Over time, cheap imitations saturated the market and established in most people's minds a perverted explanation/redefinition.
    Example:
    ME: I made croissant over the weekend.
    FRIEND: I love croissant. I get them at 7-11 or McDonald's a couple of times a week.
    ME: Clearly you've never had a croissant.
    FRIEND: Your a snob.
    ME: You're ill informed and deluded.

  4. We must be on the same wave length…I have been craving una sfogliatella lately. I used to buy them at the Sicilian bakery in Hartford, Connecticut but since we moved to New Mexico eight years ago I have not been able to find them. I was about to actually try making them last week, but chickened out after watching about a dozen different YouTube videos. I made a ricotta cheesecake (torta di ricotta) instead. Maybe I will get brave and try this recipe when it gets cooler. You were very brave to take the critique from Salvatore and then go back and try again. Success!

  5. Yes yes Please a recipe for this dessert. I tried it one time and I felt like Eva because I put so much effort into it and a lot of the filling squeezed out but we just scraped it off the pan and ate it anyway😅😅😅 I would love to try the feeling that Eva made the second time.

  10. This is amazing, bravo! The only thing that might be as hard as this is Hungarian strudel. They make the dough windowpane thin and stretch it across to cover a whole dining room table!

  15. Also, the other day I found ricotta salata in a loca grocery store!!! I was fully prepared to make the ricotta and strain it and make it myself, but thankfully now I don’t have to!
