  1. Those arancini look like heaven, and I'm definitely going to try the sfinci sometime. I will have to love the pasta alla Norma from afar as I am allergic to eggplant, but I remember how much I enjoyed it from back when I could eat it, and your version looks and sounds delightful. Perhaps I will try a version with zucchini. It won't be as good, but a pale substitute is better than nothing at all.

  3. I feel like making Aranchini after watching this. In restaurants where I come from the dish has misconception- Here in Israel every claim to be Aranchini I have seen has barely any Rice/no Rice at all, full of Cheese, no Meat or Sofrito or Peas, just fried Cheese balls in Bread Crumbs.

  4. Vincenzo, sir, Have you ever heard of or made a dish called Spaghetti Arrabiata? I had it once many years ago when I was on holiday to the south of Italy. It was delicious, and if I had a recipe I would gladly try to make it. You are the best Italian chef I have found on YouTube who makes videos in English, and my Italian is not anywhere good enough to understand what people are saying in Italian. It's a long shot request, but if you know it and can make a video on how wo make it, I would be forever in your debt.

I just realized that sfinci is actually the same as what my mother and my grandmothers used to cook as breakfast when I was little, I mean i am not even Italian (actually tunisian) and it blows my mind how similar the recipes are, i mean it even has a similar name ( isfanj which is arabic for sponge), i am bamboozled 😅

    In Austria we make Sfinci too but they are called “gebackene Mäuse” [deep fried mice😅] and we serve them with vanilla pudding. I forgot all about them until this video. Thanks for giving me childhood memories guys

    Big ups for the Norma. You made me remind the exact tone of voice when my late nonna said “oggi pasta ca sassa, mulingiani friuti e ricotta salata ‘a nonna, va bene?” Ed ogni volta era una festa 😊

  9. Italian pizza is the most disgusting thing I've ever seen. It's over cooked and under cooked at the same time .
    Come to Pennsylvania eat pudgies good tyme pizza and subs… You'll never eat that other crap again

  10. Ive eaten Sfingi in Sicily with I THINK a "ricotta based sauce" with pistachios in Sicily – they were coated
    They were absolutely wonderful.

    I was over my life all over italy and the world but sicily imho has the best food in the world im sorry 😀

    Thank you so much for your parmigana recipie on your website 🙏as also your olive oil recommendations also to me personally
    was never able to cook that dish – last time (with your recipie) it turned out wonderful (i made Zucchini Parmigana not with eggplant – and tried to spare with watery ingredients)

    Can highly recommend to also the viewers to try (if they get it) Frantoia Olive Oil – i love it because even cooked it has no "bitterness" – an absolute wonderful product
    Also made with that oil the best Aglio e Olio ive ever did.

  11. Hi Vincenzo, I have watched most of your videos and I love them. As a chef that has made a carere makeing new nordic cuisine I have little to none expertise in Italian cuisine except home cooking but i wonder why you don't mix the cheese with the meet because the meat is already cold. The cheese won't mealt and you will get an even distribution of the filling. Best regards, Fannar.

  12. Imagine properly rehydrated the raisins before burning the entire fritter. Some people just shouldn't be allowed to cook publicly. All I can see is a burnt mess that stinks.
