In a typical week, my Italian mom prepares an array of mouthwatering dishes that showcase the rich flavours and culinary heritage of Italy. From comforting classics to indulgent treats, her repertoire never fails to amaze our taste buds.
One of our family favourites is potato gateau, a delightful dish made with layers of thinly sliced potatoes, ham and cheese. Baked to perfection, it offers a harmonious blend of creamy textures and savoury flavours that are simply irresistible.
Another highlight is her lasagne alla bolognese, a timeless Italian classic. Layer upon layer of homemade pasta sheets, hearty Bolognese sauce, and luscious béchamel sauce come together to create a symphony of flavours. Each bite is a journey through Italy’s culinary history.
On special occasions, my mom treats us to casatiello, a savoury Easter bread loaded with a medley of cured meats and cheese. Its rich aroma fills the house as it bakes, and the combination of flavours is truly heavenly.
Lastly, no Italian meal is complete without parmigiana di melanzane, a delicious eggplant dish. Thin slices of eggplant are lightly fried, then layered with tomato sauce, mozzarella, and Parmesan cheese before being baked to golden perfection. The result is a delicious melt-in-the-mouth dish that embodies the essence of Italian comfort food.
These are just a few examples of the incredible dishes my Italian mom prepares in a week. Her passion for cooking and dedication to preserving traditional Italian recipes bring warmth and joy to our table.

Potato gateau ingredients:
500gr potatoes
50gr Neapolitan salami
100gr mozzarella
50gr ham
2 tbsp Parmigiano Reggiano
2 eggs
black pepper to taste
salt to taste
20gr breadcrumbs

Oven time: bake in a static oven preheated to 180°C for about 30 minutes.

Bolognese lasagne ingredients:
lasagne sheets
300gr mince beef
50gr carrots
50gr onion
300gr tomato passata
1tbsp extra virgin olive oil
black pepper to taste
150gr pancetta
50gr celery
100gr red wine
vegetable broth
salt

for the bechamel sauce
70gr butter
1lt milk
nutmeg
70gr flour
salt to taste

Oven time: bake in a preheated static oven at 170°C for 40 minutes.

Aubergine parmigiana ingredients:
1.7kg aubergine
500gr fiordilatte or mozzarella
1 onion
extra virgin olive oil for the tomato sauce
salt
sunflower oil to fry
1kg tomato passata
150gr Parmigiano Reggiano
basil
pepper

Oven time: bake in an oven preheated to 200° for around 30 minutes.

Casatiello napoletano ingredients:
for the dough
375gr water
10gr yeast
black pepper to taste
2tbsp extra virgin olive oil
650gr flour
15gr fine salt
25 gr lard

for the filling
100gr Neapolitan salami
150gr ham
150gr Pecorino cheese
2 eggs

for the decoration
3 eggs

Oven time: bake on the bottom rack of an oven preheated to 170° C for 75 minutes.
