My mom used to make stuffed peppers for us kids before she went to work. We gave it the cats.
My mother was not a very good cook(my dad was 1st gen. Sicilian and was a great cook, but my mom’s spaghetti sauce was great and her chicken soup was the best. I love you both so much. I always say a prayer for you.
If Mamma always cooks best (and she does), the solution to cooking the best food is simple. You two need to have a baby. Then Eva will become a Mamma and her cooking will then automatically become the best. You can't argue with logic.

In Spain we also eat tripe with tomato in a dish called callos, usually with a little bit of chorizo. Looks very similar. I've never tried it because I always thought it looked disgusting but my dad loves them! Maybe one day I'll be brave 😅

beef tripe is awesome. more people should eat tripe! Next time you go to Mexico, have menudo soup. A good tripe soup is heavenly.
I'm not a tripe person, regardless of the style it was made or how much I try it. My wife loves it and her recipe for it (which looks similar to this one, though her soffritto is a little different) gets rave reviews from all. I'll send you guys a pic next time she makes it.

That was lovely 🙂 I always love the cooking of the Italian Mammas. It is the real thing for me- and also maybe the street food. Also I admire Eva' courage to eat that type of pasta in a white blouse :). And I have not watched your videos for a while now, and I know I am always picky about Eva's moods and expressions (sorry for that, cannot help myself) and today I saw her so happy and relaxed that I had to smile 🙂

I'm not a good Italian… I simply cannot do Tripe. Everything else looks awesome, as usual.
How are you not 400 lbs?? I put on weight just watchin your vids. Also do you buy salt in bulk and what type when you are adding to the water for pasta?

My second generation Italian American wife can't match her mother's cooking. I miss my mother-in-law not only did she cook fantastically she also catered to me having the drinks that I preferred, cooking my favorite dishes and yelling at her daughter, my wife, that she should learn to do things better! I loved her spicy cauliflower dish almost a casserole but much much more. Don't get me wrong my wife is a good cook as are her 3 brothers, but they can't come close to her skill and enthusiasm.
I hate “trippa” the smell while it’s boiling make me run away from home.
That's crazy, just the other day I was thinking about cooking chickpeas in an Italian style tomato sauce (as opposed to something like chana masala, Indian chickpea curry) but didn't know if that sort of thing even existed, and then today I click this video, and lo and behold
