You can personalize this recipe to your taste and the quantity that you want. I usually make a big batch and freeze it to use another time, or use with other dishes like eggplant parmesan. Save your money and don’t buy “San Marzano” tomatoes. They’re grown in New Jersey and over priced. The real San Marzano tomatoes are grown on a small plot of land in Italy and aren’t shipped world wide.

Tomato sauce, 4 cans
Crushed tomatoes, 2 cans
Tomato paste, 1 can
1 onion, diced
Garlic, minced
Olive oil
Dried Basil
Dried Oregano
Dried Parsley
Garlic powder
Worcestershire sauce
Salt & pepper
Sugar

In a large pot over medium-low heat sauté the onion in olive oil, salt, pepper, and the dried herbs until softened. Add the minced garlic and tomato paste. Warm through the paste and cook the garlic until fragrant. It won’t take long. Add the crushed tomatoes and tomato sauce. Add more dried herbs, garlic powder, and Worcestershire sauce. Taste for seasoning and add some sugar if the canned tomatoes taste too bitter. You can cook this in as little as 30 minutes, but it’s better if it cooks for an afternoon. Serve with your favorite pasta, with meatballs, or use it in another dish such as eggplant parmesan, chicken parmesan, baked ziti, etc.

  1. What does the Worcestershire sauce do in the recipe? Never would have thought of adding it.
